Taco Soup!


My boyfriend's mother makes this soup that is soooo good, you can't pass it up! And the best part is how easy it is. I think the hardest part of making this soup is opening all the cans! Here goes:




Taco Soup

Brown: 1 1/2 pounds ground beef and 1 large onion

Add: One packet of taco mix

Add: 3-4 cans of beans (black, dark red, white, Great Northern, pinto or ever chick peas) drained, 28oz. can diced tomatoes, 14.5 oz can Del Monte diced tomatoes with mild chillies or jalepenos, 1 small can of sliced black olives drained, 1 can of corn with liquid, 1 small can of tomato sauce

Bring to a low boil and then simmer for an hour and a half.

Serve with sour cream, tortilla chips and cheddar cheese.

You can treat this as a soup, chilli or even nachos. It's a great meal on a cold rainy night like tonight!!!
